Grab your notebook, and let’s dive in!
1. The 3 Essential Starter Menus
You don’t need a huge menu to start. Focus on these 3 items and make them “Perfect”. These are the best-sellers you can’t miss.

1.1 Iced Matcha Latte
The absolute signature drink. Number 1 best-seller everywhere.
- Selling Point: The creamy richness of milk cuts through the bitterness and Umami of matcha perfectly.
- Target: Everyone, Latte lovers, Teens.
1.2 Iced Clear Matcha / Cold Whisk
For health-conscious customers and purists who want the real tea taste.
- Selling Point: Refreshing, 0 Calories (if unsweetened), full tea flavor.
- Target: Fitness enthusiasts, Weight watchers, Lactose intolerance, Matcha Purists.
1.3 Matcha Coconut
A refreshing menu that fits tropical weather perfectly.
- Selling Point: Natural sweetness and aroma of coconut water pairs incredibly well with matcha.
- Target: People seeking freshness, Tourists.
2. Standard Brewing Ratios
“Consistency” is key. A customer ordering today and tomorrow must get the same great taste. Here are the recommended ratios for a standard 16oz cup (adjust sweetness to taste).
| Menu | Matcha (g) | Hot Water (ml) | Milk / Water (ml) | Syrup (ml) | How to |
|---|---|---|---|---|---|
| Matcha Latte | 4 - 5 g | 40 ml | 120 ml | 10 - 15 ml | Whisk matcha with hot water until smooth. Pour over milk mixed with syrup. |
| Clear Matcha | 3 - 4 g | 40 ml | 120 ml (Cold Water) | 0 - 10 ml | Whisk matcha with hot water. Shake or pour over cold water. |
| Matcha Coconut | 3 - 4 g | 40 ml | 120 ml (Coconut Water) | - | Whisk matcha with hot water. Pour over coconut water. |
Tip: Always use a Digital Scale to measure powder and liquids. Don’t eyeball it, because everyone’s “hand weight” is different.

3. Pricing Strategy for Profit
High sales but no profit? This happens when pricing is wrong. Especially with Delivery Apps taking ~32% GP (Gross Profit).
Basic Formula
You should set your selling price at 2.5 to 3 times your Cost of Goods Sold (COGS).
Selling Price = (Ingredients Cost + Packaging Cost) x 3
Example Calculation: Iced Matcha Latte
- Matcha Powder (5g): 15 THB (Assuming 300 THB/100g)
- Milk (120ml): 6 THB
- Ice + Syrup: 2 THB
- Cup + Lid + Straw + Bag: 5 THB
- Total Cost per Cup = 28 THB
Recommended Price: 28 x 3 = 84 THB (You might set it at 85 or 89 THB)
Why multiply by 3?
- GP Fee (32%): Takes away ~27 THB.
- Gross Profit: Leaves you with ~28-30 THB (For your labor, electricity, marketing).
4. How to Store the “Heart” of Your Shop (Matcha Storage)
Matcha is “Fresh”. It hates Light, Heat, Moisture, and Air. If stored poorly, it turns brown and tastes stale (Oxidation).
3 Rules of Storage:
- Seal Tight: After every use, zip the bag or close the tin tightly immediately. Don’t leave it open to air.
- Refrigerate: Cool temperatures slow down degradation best. Keep it in the fridge.
- Opaque: If using a clear jar, keep it in a dark cupboard. Avoid direct neon light or sunlight.
Tip: Before brewing, if you take matcha out of the fridge, let it sit for a bit to reach Room Temp. This helps the powder dissolve better and releases more aroma.
