  • The Fix: Use water between 70°C - 80°C (158°F - 176°F). If you don’t have a temperature-controlled kettle, boil water and let it sit for 2-3 minutes before pouring.

2. Low Quality Matcha

Matcha quality makes a huge difference.

  • Culinary Grade: Designed for baking. It uses older leaves that are naturally more bitter and astringent. It needs sugar and milk to be palatable.
  • Ceremonial Grade: Made from the youngest, shaded leaves. It is naturally sweet, savory, and smooth.
  • The Fix: If you want to drink matcha straight (as tea), invest in Ceremonial Grade. Save the culinary grade for lattes and cookies.

3. Using Too Much Powder

If you use too much matcha powder for the amount of water, it will be concentrated and intense.

  • The Fix: Start with the standard ratio: 1 gram (approx. 1/2 tsp) of matcha to 60-70ml (2oz) of water. Adjust to taste from there.

4. Whisking Too Long

While less common, over-whisking or letting the tea sit too long can sometimes bring out more astringency. Matcha is a suspension, not an infusion, so the particles are physically in the water.
